Spaghetti Bolognese

You will need (serves 2)

  • 400g wholegrain spaghetti
  • 400g lean minced beef
  • 1 stick of celery, chopped
  • 1 onion, peeled and finely chopped
  • 400g tin of chopped tomatoes
  • 3tsp olive oil
  • 1 clove of garlic crushed
  • Handful of basil leaves, torn
  • Freshly grated parmesan cheese

Instructions

  1. Heat half the oil in a non-stick pan and fry the mince until it browns, and then drain off the fat. Put the mince to one side
  2. Heat the remaining oil in the pan, add the onions, garlic, celery and most of the basil leaves and cook for five minutes.
  3. Add the tomatoes and mince, stir and simmer over a lower heat for 30minutes.
  4. Cook the spaghetti according to the packet instructions, mix with the sauce and sprinkle with parmesan and the leftover basil.
  5. Serve with a small glass of red wine.
