Flip the bird

You will need (serves 4)

  • 1 lemon
  • 1 lime
  • 1 tbsp ground flaxseed
  • 240ml tomato juice
  • 180ml orange juice concentrate
  • 1 and half cloves of garlic
  • 1 tsp dried Italian seasoning
  • 4 boneless, skinless chicken breast halves
  • A cup of chunky salsa ( try Doritos Dippas salsa)

Instructions

  1. Grate the lemon and lime into a re-sealable plastic bag. Squeeze in the juice but throw out any seeds and pulp.
  2. Mix in everything else except the chicken and salsa
  3. Drop in the chicken, reseal the bag, and marinade in the fridge for 2 hours
  4. Grill the chicken, basting a few times. Cook right through.
  5. Serve with salsa on brown rice or salad

Why should you eat this?

Scientists have found that a diet high in omega-3 in the flaxseed fed to chickens alters your body's metabolism, helping it burn fat more efficiently. A low fat source of protein that helps muscles grow while you lose fat means that chicken's goose is well and truly cooked.
